This arrangement is designed to be used either as congregational accompaniment or as a piano solo. I have made some minor adjustments to the version in most hymnals, but they do not deviate much from the standard. I used the last part of the first verse as a special ending which could be sung a capella. Melody is carried in the right hand. There are actually 5 verses but I have included in the vocal line only the first and fourth because they are most meaningful to me. The other verses are on the final page. Program note.  

Jean Anthelme Brillat-Savarin (1755-1826) was a man of many things: lawyer, judge, Mayor of Belley, author and professional violinist. He is most famous for his book, Physiologie du goût (The Physiology of Taste). According to Wikipedia, it is a book of his culinary reminiscences and reflections on the craft and science of cookery and the art of eating. Incidentally, the cheese Brillat-Savarin is named after him. 

I am a foodie and I have written quite a few works whose subjects are food related. My magnum food opus is Apicus de re Coquinaria (2023). So, it is inevitable that I would want to do a song cycle with texts excerpted from Goût.
