Jean Anthelme Brillat-Savarin (1755-1826) was a man of many things: lawyer, judge, Mayor of Belley, author and professional violinist. He is most famous for his book, Physiologie du goût (The Physiology of Taste). According to Wikipedia, it is a book of his culinary reminiscences and reflections on the craft and science of cookery and the art of eating. Incidentally, the cheese Brillat-Savarin is named after him.
I am a foodie and I have written quite a few works whose subjects are food related. My magnum food opus is Apicus de re Coquinaria (2023). So, it is inevitable that I would want to do a song cycle with texts excerpted from Goût.
