The composer has written about the piece: â??The music describes Santiago's emotions, thoughts and actions during his last journey. The trumpet announces his signature theme, accompanied by the brass and strings depicting the sound of the seagulls and the ocean. The magnitude of the vast ocean, the anticipation of catching the fish, memories of a distant waltz, and the exciting fight that ends in triumph. Now, it's time to return home with his valuable possessions. He already won the last and most important fight of his life.

He was the founder and served for 16 years as the artistic director of the International Guitar Congress-Festival of Corfu, Greece.  He is a voting member of the Recording Academy (Grammys). There is a version for Soprano/tenor and Piano and one for guitar as well. Easy to perform and the text was inspired of the following narrative. I Slaughtered an Orange over the Sink... ...and it just sat there…It didn't say a word, not a sound of anguish, not even when my teeth started to tear apart it's flesh little by little... I knew it was a special orange but I couldn't fathom the magnitude of its character…Even when gentle I took it away from its friends there at the top of the kitchen counter, it looked at me almost with a sense of gratitude. Yes, gratitude.! As if it was saying: Thank you! Thank you for helping me to fulfill the purpose of my life…Since I was a little seed I knew I would serve a higher purpose. My sacrifice will help a human to become a healthier mother, doctor, composer, a better scientist. Yes, I think I felt it said…a better composer as well. ...and there I was, sinking my teeth deep inside its flesh and taking all of what it had to offer. It's life, it's substance, it's gratitude for serving a higher purpose. I slaughtered it over the sink, to avoid any evidence of what had happen there. The remaining outer sell, I placed it on the stove top and lighted up with fire, as my mother use to do, to release the heavenly smell and there it was. Evaporated everywhere! I inhale it, It became totally a part of me. This guitar and vocal work were originally set on the Robert Frost poem ‘Stopping by Woods on a Snowy Evening’, and was written for a lecture series at Boston University given by Lukas Foss entitled ‘Words on Music. Some years later I set out to publish the work and found that the estate of the late R. Frost frowned upon this particular practice and after a second failed attempt to get permission to publish the work, I decided to write my own verse for this composition (my first actually) and use a subject familiar to me, the story of Daedalus and Icarus Journey to freedom.After his arrival in Crete, Daedalus found that Minos would not let him leave. He subsequently obtained wax and feathers and fashioned wings for himself and his son Icarus. Published by Silver Sickle Publications (A0.1070387). Mountains of Stowe, 2015 is a two-movement piece commissioned by and dedicated to guitarist Adam Holzman. The first movement I Stand Strong reflects the serenity and isolation someone might feel when surrounded by the mountains of Stowe, Vermont in the U.S.A. The second movement â€¦and the Sky is the Limit written in an ABA cyclic form is full of rhythmic gestures starting with the combination of 7/8, 2/4, 5/8 and 3/4 in the first four measures that leads to a slow movement as an attempt to sing a Greek song in those vast territories and to portray the thankfulness of being there and experience the presence of the amazing beauty of it.  When asked why he commissioned this piece, Holzman replied, My wife and I spend our summers in Stowe. We love being there, celebrate the summer and spend time outside. We have family and friends who come and share a few days with us and Apostolos is a dear friend who has been coming for several years. We talked about the possibility of him writing a piece that reflected Stowe and the mountains. When asked about the piece, Paraskevas responded, I always write music for the person behind the instrument, so while composing every note of this piece I had Adam in my mind; the way he plays, the way he breathes the way he lives his life. The work is written for the mountains of Stowe through Adam’s eyes and heart and I am the vehicle who translates it.
